
The weather has (finally!) warmed up just enough for it to truly feel like spring! Woo-hoo! And now that we have some springtime party inspiration, it’s time to get down to the nitty gritty – the food! I am the number one supporter of a big cup of soup, but now that spring has sprung, something lighter but still hearty is what my taste buds call for.
Here are a couple of quick recipes after the jump! Allons-y and bon appetite!

What you’ll need:
- 2 cups cooked quinoa
- 2 large eggs
- 1 cup carrot, diced (shredded carrots work well here too)
- 2 green onions, diced
- 2 cloves garlic, minced
- 1/4 cup chopped fresh cilantro
- 1/2 cup grated Parmesan cheese
- 2 tbs all-purpose flour
- 1/2 tsp salt
- 1/4 tsp freshly ground pepper
Preheat oven to 350 degrees
Combine all ingredients and mix well

Lightly coat muffin tin with oil and distribute a tablespoon of mixture in each. Make sure to press them down flat so you get little medallions and not lumpy balls.

Bake for 17-20 minutes (the bottoms will be nice and golden brown).
For my dipping sauce I like it thick and spicy, so I used a great Wasabi Mayo I found overseas that I can’t get enough of!

Hearty Roasted Turkey Artichoke Sandwich
When I passed Panera the other day I saw an picture of this in the window. I didn’t have time to stop, so I vowed to make one at home when I got the chance.

What you’ll need:
- 2 slices multigrain bread
- 1 handful of baby spinach (about a cup)
- 1 shallot
- 1/2 cup sun dried tomatoes, chopped roughly
- 4 artichoke hearts, chopped roughly
- roasted turkey slices
- pinch of salt and pepper
Saute shallot in hot pan with olive oil until opaque, then add spinach.
Once wilted remove from heat and add artichokes and sun dried tomatoes to pan, seasoning with a pinch of salt and pepper.
Toast bread slices.
Assemble and eat!
You can always add your favorite condiments (yay wasabi mayo!) and cheese before you start to chow down as well.
